Vegan Coconut Cream Mousse

 Ingredients

1 can coconut milk or cream

1/4 cup cocoa powder

1 tbsp dutch cocoa powder or additional regular

3-4 tbsp powdered sugar or erythritol (or 2 tbsp for extra dark)

Instructions

- Either refrigerate the coconut milk can overnight, or freeze about 10 minutes.

- Do not to shake the can. You want the cream separate from the water underneath.

- Once cold, open the can and transfer only the thick part to a bowl.

-Discard the watery part, or save for another recipe.

- Using either a stand mixer or hand beaters (or a fork and a ton of strength and patience), whip the cream until smooth.

-Add remaining ingredients and whip until it forms a mousse-like texture.

Vegan Trifle

- 1 Vegan Swiss Roll (300g)
- 6 packets of "ready-to- eat" Vegan jelly (strawberry or raspberry flavour)
- 1 can of tinned fruit (peaches or two-fruits), juice drained and put aside to use separately.
- 600g vanilla custard
- 250ml Vegan Thickened Cream
- 1/4 cup icing sugar mixture
- 1 tsp vanilla essence

Instructions
- Remove jelly from packets. Use a knife to cut the jelly into 3 cm chunks.

- Place the thickened cream into a bowl and whip until very thick.

- Beat in icing sugar and vanilla essence.

- Cut the jam roll into slices 2 cm thick and layer into a large glass bowl.

- Drizzle the juice from the two fruits. Allow to soak for 10 minutes

- Layer the soaked cake with custard.

- Add jelly on top of the custard layer

- Then add cream on top of the jelly layer

- Top with two fruit

- Dollop fruit with the cream and custard,
Add the jelly on top and then repeat the process with the cream and custard.

Notes

Swiss Jam Roll: It's impossible to find a vegan Swiss roll in store, so here is the easiest recipe for a Vegan Swiss Jam Roll made from scratch.

Jelly: To date, I've been unable to find vegan jelly crystals. However, the prepackaged "ready-to-eat" jelly is accidentally vegan.

These include:
- Aeroplane Jelly (Blackcurrant, Orange, Pineapple, Strawberry & Raspberry flavour)
- Coles Branded Jelly Cups (Raspberry, Orange & Strawberry flavour) and Fruit in Jelly (Mandarin in Orange Jelly, Peach in Mango Jelly, Pear in Blackcurrant Jelly & Two fruits in Strawberry Jelly)
- Woolworths Brand Jelly Cups (Tropical & Mango flavour) and Fruit and Jelly Cups (Apple in Pineapple Jelly, Mango in Mango Jelly, Peach in Mango Jelly & Two fruit in tropical Jelly)
- Also, Pandaroo Mini Jelly Cups from the International Section.

Custard: Most make-at-home custard mixes are vegan. I use "Foster Clark's Original Recipe Vanilla Flavoured Liquid Custard".

Cream: Plant-based creams are becoming more popular. I used "Flora Thickened Cream". If you cannot find a vegan cream, you can always make your own with coconut cream, as per this Vegan Mousse recipe.

Fruit: I prefer two-fruits tinned fruit or peaches, but you can also use a combination of fresh and tin fruit.

Vegan Swiss Jam Roll

The Swiss Roll recipe is taken from Sarakidd.com

The pan required to bake the Swiss roll is appropriately 45cm x 32cm x 2.5cm.

The brand of vegan sweetened condensed milk used was "Nature’s Charm".

Ingredients - Swiss Jam Roll
- 125 ml (1/2 cup) vegetable oil
- 60 g ( 1/2 cup) icing sugar
- 180 ml (3/4 cup) plain soy milk
- 235 g ( 3/4 cup) vegan sweetened condensed milk
- 1 tablespoon vinegar
- 2 teaspoon vanilla bean paste
- 200 g (1 1/3 cup) plain all-purpose flour
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon sea salt
- Jam (230g vegan jam)

Instructions - Swiss Jam Roll

- Preheat your conventional oven to 160°C

- Grease a jelly roll pan, line with baking paper, and grease again.

- In a large mixing bowl, add oil and stir through the icing sugar until it’s dissolved.

- Add the soy milk, sweetened condensed milk, vinegar, and vanilla, and stir until fully combined.

- Then add sieved flour, baking powder, baking soda, and salt.

- Whisk gently until completely combined. Don’t over-mix.

- Pour the batter into your prepared jelly roll tin and spread it out evenly with your spatula.

- Gently tap the cake tin on the bench to release any large air bubbles.

- Bake on the middle rack of your oven for 20 to 22 minutes. It should turn golden brown and be springy to touch when done.

- Remove your cake from the oven and let it rest until just cool to the touch; approximately 30 to 60 minutes. Now is the time to make your jam.

- To assemble, spread your jam evenly over the cake, leaving a 1 inch border around the edge clean.

- Gently but tightly roll the cake up, peeling away the baking paper as you go. Leave the last bit of the baking paper around the outside of the cake, covering the exposed area.

- Place in the freezer for 30 minutes, until set.

- Remove from the freezer and remove the last bit of baking paper.

- Using a large serrated knife, trim the edges from both ends of the cake to reveal an even swirl

Ingredients - Swiss Roll Jam
- 200 g (approx. 1 2/3 cups) raspberries (fresh or frozen)
- 150 g (2/3 cup) caster sugar
- 2 tbsp lemon juice

Instructions - Swiss Roll Jam
- Tip the raspberries into a large saucepan, add sugar and lemon juice.

- Cook gently over a low heat, stirring occasionally with a wooden spoon until all the sugar is dissolved.

- Bring to the boil and boil vigorously for about three to four minutes. Keep an eye on it to make sure it doesn’t burn and doesn’t overcook. The bubbling will start to slow down.

- To check it’s ready, place a spoon in the freezer for a few minutes. Remove and add a small amount of jam. Run your finger through the middle (careful it’s hot!) and if the jam doesn’t flood to fill the hole it’s ready. Remove from heat and set aside until ready to use.

The Swiss Jam Roll can be used in the Vegan Trifle.

Ingredient Notes

Maple syrup – can be switched for golden syrup or maple flavored syrup or pretty much any syrup you have on hand. We often make these with golden syrup and they are delicious.

Dessicated coconut – is also called finely shredded coconut.

Soy milk – can be replaced with any non-dairy milk that you have on hand.

Break off pieces of the cookie dough and roll them into balls. Aim to get around 20 cookies from the batch.

Baking Times

We find 12 minutes to be perfect for a soft and chewy cookie, but if you want it more crunchy then you can increase the bake time up to 15 minutes. Just keep an eye on them to make sure they don’t burn.

They usually spread perfectly on their own, but in the event that they don’t, you can either bake them an extra couple of minutes, so long as they haven’t been baking too long, or you can simply flatten them gently with a fork as soon as they come out of the oven still warm and soft.

Make Them Gluten-Free

These cookies work GREAT as gluten-free. Simply replace the regular all purpose flour with a gluten-free all purpose baking blend. Also ensure your rolled oats are certified gluten-free and you’re good to go.

Storing and Freezing

Keep your cookies stored in a sealed container at room temperature where they will stay good for up to one week. You can also store them in a covered container in the fridge.

They are freezer friendly for up to 3 months.

Instructions

Preheat the oven to 350°F (180°C).

Add the rolled oats, flour, coconut, baking soda, salt and cinnamon to a mixing bowl and mix together.

Cream the vegan butter and brown sugar together and then add the syrup and vanilla and mix in.

Then mix the dry ingredients into the wet ingredients by hand. Stirring until the mixture is very crumbly.

Add the soy milk and mix in. Check if you can roll some of it into a ball – it should be sticky enough to do so. It will still be crumbly and look almost as if it's still too dry, but when you try and make a ball you'll find it's also very sticky. If it's still too crumbly, add a tiny bit more soy milk until it's sticky enough to roll into balls. When rolling into balls, you'll find that you're more pressing them into balls than rolling, this is fine, press into a ball and then roll a bit to make it nice and round and even.

Place the rolled balls onto a parchment lined baking tray. Aim to get around 20 cookies from the batch.

Bake for 12 minutes. The edges should be firm and the tops lightly browned. They will be soft but will firm up while cooling.

Remove from the oven and allow to cool and firm up directly on the tray.

Thai Cashew Tofu Stir-Fry

Adapted from Foodaciously.com

Ingredients

Cashew & Tofu
- 1 Cup (80g) Roasted Cashew Nuts
- 400g Tofu Block (firm or medium-firm)
- 2 Tbsp Soy Sauce
- 2 Tbsp (40 ml) Water

Sauce
- 1/2 Tbsp Sesame Oil
- 2 Tbsp Vegan Thai Chilli Paste
- 2 Tbsp Soy Sauce
- 2.5 Tbsp (50ml) Water

Stir Fry
- 1/2 Tbsp Vegetable Oil
- 4 Small Garlic Cloves
- 4 Fresh Thai Red Chillies
- 2 Red capsicum
- 1 Large Onion
- 4 Spring Onion Stalks

Instructions

Cashews
If you're using unroasted cashews, you can quickly toast them in a dry skillet over medium heat until they're lightly brown. Then, set them aside to cool down and crunch up.

Tofu
Rinse and drain the tofu block, then dice it into bite-sized cubes.

Add them to a bowl, followed by 2 tbsp of soy sauce and 40 mL of water. Mix well to coat the tofu cubes with the soy marinade, and let them soak for 15 minutes.

Sauce
To make the stir-fry sauce, mix the sesame oil with the Thai chilli paste and the remaining 2 tbsp of soy sauce and 50 mL of water in a cup

Stir Fry
Heat the vegetable oil over medium heat.

Then add thinly sliced garlic and Thai red chillies, cut in half lengthwise, and sizzle them for a minute until fragrant.

Next, add the marinated tofu cubes, leaving the excess soy sauce behind in the bowl. Cook them over medium-high heat until the liquids have evaporated.

Sear the tofu cubes until they're lightly browned, tossing them around the pan to char them nicely on all sides.

Now, turn the heat to high and tip in the prepared Thai chilli sauce, followed by diced red peppers and wedged onions.

Stir-fry all until the onions have softened slightly. Add chopped spring onions and roasted cashews.

Give all a final stir and remove the pan from the heat.nServe with a side of steamed jasmine rice, and lime wedges.

Tips
Don't overcook the peppers and onions, or they'll get too soft. The secret to a great stir-fry is in the crunchiness of its veggies.

The classic Thai cashew stir-fry is not as saucy as the Chinese version. But, if you like it saucier, you can double up the sauce ingredients and add an extra splash of water.

Only add the cashews if you know you'll eat the stir-fry immediately, or they will get soggy.

If you can't find vegan/vegetarian Thai chilli paste, you can make it from scratch.

In a food processor, blend:
- 2 fresh red chillies (or 1/2 teaspoon of chilli powder)
- 1 tablespoon of vegetable oil
- 1 tablespoon of soy sauce
- 2 teaspoons of sugar
- 2 teaspoons of tamarind sauce

For the stir fry:

Tofu
To start off, coat the tofu in cornflour – just chuck it all in a bowl and give it a good mix up until all the pieces of tofu are nicely coated.

Add the oil to a wok and bring it up to a medium-high heat. Then add the cubes of tofu and fry for a few minutes on each side – you want to get a nice golden brown colour. Once done, take the tofu out of the wok and put it to one side for later.

Sauce
In a bowl, mix together all of the ingredients for the sauce and put that to one side for later as well.

Stir Fry
Add 1 teaspoon oil to the wok and get it back up to a medium-high heat.

Fry the shallots and cashews and cook for a couple of minutes until the onions have softened and the cashews have started to brown. Be careful not to burn them, you just want to catch them as they start to brown.

Now get the chilli and garlic in and cook for a minute.

Chuck all the veg in there and stir for a few minutes more. Stir Fry until everything is nice and hot but still fresh and crunchy.

Pour the sauce in and mix everything up whilst on the heat so it's all coated nicely.

Serve immediately with rice.

Increase temperature to medium high and add the tofu. Stir fry for a couple minutes until you see some light browning.

Add 2 tablespoons of water or stock, the beans, sugar and 1 teaspoon of the soy sauce. Stir to combine and have a taste of the sauce. Add the other teaspoon of soy sauce you flavour more salt.
